I’ve always seen recipes for energy balls popping up everywhere, praising how easy, healthy, and energizing they are. Honestly? I never bought into it. They always seemed like more work than they were worth for some reason, and I just wasn’t tempted to give them a try.
But since starting this blog, I’ve been challenging myself to step outside my comfort zone and explore new things. Plus, I had half a jar of peanut butter sitting around, so I figured, why not? Let me tell you—not only are these energy balls ridiculously easy to make (though let’s not sugarcoat it, washing the measuring cups after is the real challenge), but they’re also incredibly good, energizing, and surprisingly filling.
There have been days when I skipped lunch because I was rushing to an online course, and grabbing one of these little gems saved me. They kept me awake and full for the entire 4-hour class (yes, 4 hours!). So, for all you peanut butter lovers out there, these energy balls are for you!

What you need
1 cup oatmeal
1/2 cup creamy peanut butter
1/4 cup date syrup
pinch of salt
1/3 cup chocolate chips (I love the white ones)- optional but adds a lot!
What you do
Mix all the ingredients in a bowl until the batter is unified.
With damp hands create the balls and put in the fridge for at least an hour.
Prepare yourself a cup of tea, grab an energy ball and be prepared for a bite of heaven...
