A classic favorite - the chocolate chip cookie - but with a twist!
This one’s a vegan option: no eggs, no dairy.
Don’t be put off by the need for a couple of bowls; as usual, it’s super easy to make. And the smell? Absolutely amazing - it brings everyone out of their rooms!
But the best part of this recipe? You can eat the dough as is! (Honestly, for me, it’s even better than the cookies themselves).

What you need:
2 cups regular white flour (not self-rising)
2 tsp baking powder (not baking soda, baking powder that comes in packets)
½ tsp salt
1 tsp cinnamon (optional)
¾ cup chocolate chips - whichever flavor you prefer
¾ cup white or light brown sugar
½ cup canola or sunflower oil
1 tsp vanilla extract
½ cup soy milk (or applesauce/banana/almond milk/oat milk)
What you do:
Preheat the oven to 180°C.
Line a baking tray with parchment paper. It’s important to use parchment paper, not oiled foil or any other tricks, or the cookies will stick and won’t come off the tray.
If you don’t have chocolate chips, chop some regular chocolate into small pieces.
In a bowl, mix all the dry ingredients except the sugar (flour, cinnamon, salt, baking powder) with a wooden spoon or a whisk.
In a separate bowl, whisk together the wet ingredients with the sugar (soy milk or its substitutes, oil, vanilla extract, and sugar).
Make a small well in the dry mixture and pour in the wet mixture. Mix well until combined (using your hands is best, but you can also use a whisk or wooden spoon). Mix only until the flour is no longer visible and the mixture is well-combined. It’s very important not to overmix, or the cookies will turn out too hard.
Add the chocolate chips and mix very gently.
With wet hands, form dough balls and arrange them on the parchment paper. Make sure the balls are roughly the same size.
Place in the oven and bake for about 10-15 minutes. Check the cookies - they should look firm on the edges but still soft in the center and slightly golden, but not too much. Don’t be tempted to leave the cookies in the oven longer - they will harden as they cool.
If you leave them in longer, they'll become very hard.
